Banana peel muffins

  • 2 ripe organic bananas and peel
  • 1 tsp cinnamon
  • 2 tbsp date syrup
  • 80 g melted coconut oil + extra
  • 30 g brown sugar
  • 200 ml Provamel Almond Drink
  • 250 g pastry flour
  • 2 tbsp baking powder
  • ½ tsp bicarb
  • Pinch salt
  • 4 dates, cut in small pieces (or vegan chocolate pieces)

  1. Soak the banana skins in cold water with the cinnamon for 2 hours.
  2. Preheat the oven at 175°C.
  3. Drain the banana peels and cut into very small pieces.
  4. In a large bowl combine all dry ingredients. Mash the bananas and combine with all the wet ingredients. Whisk until smooth. Add the chopped dates and banana peel.
  5. Add the wet ingredients to the dry and whisk until you have a batter.
  6. Grease the muffin tins with coconut oil and divide the batter.
  7. Place in the oven for 20-25 minutes until a toothpick comes out clean.
