Banana and raisin muffins

  • 250 g spelt flower
  • 75 g agave powder (or stevia or sugar)
  • 1 tsp baking soda
  • 1 tsp of yeast
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 2 large very ripe bananas
  • 200 ml plain plant-based alternative to yogurt sweetened with agave
  • 120 ml rapeseed oil
  • 50 g raisins

  1. Preheat the oven to 185° C.
  2. Mash the bananas, mix with the plant-based alternative to yogurt sweetened with agave and stir well together with the oil.
  3. Add in the dry ingredients, make sure everything is mixed well, but don’t stir too much. There can still be some lumps of flour in the dough.
  4. Spoon the dough in muffin tin and bake for 25 mins. until done and golden brown.
