Stir fried tofu with roasted tomato and spinach on toast

Ingredients

  • 300g cherry tomatoes
  • 1 clove of garlic
  • 200g Baby Spinach
  • 100ml Provamel Oat Original
  • 500g tofu, firm
  • 1 tbsp of sunflower oil
  • 1 tsp curry powder
  • A few sprigs of coriander
  • 4 slices of sourdough bread
  • Salt and pepper

  1. Preheat the oven to 180°c. Add cherry tomatoes into a baking dish and drizzle with olive oil, salt and pepper.
  2. Mash the tofu and mix with Provamel Oat Original and season with curry powder, crushed garlic, salt and pepper.
  3. Place the baking dish with cherry tomatoes in the oven and roast for 5 to 8 minutes.
  4. Stir Fry the tofu for 5 to 6 minutes then add the spinach and stir until the spinach has shrunk.
  5. Serve the stir fried tofu with the roasted tomato on grilled sourdough bread. Enjoy!
