Taco with beetroot Tzaziki

  • 8 Tacos
  • 2 avocados
  • 2 lettuce hearts
  • 40g walnuts
  • 30g shoots of your choice (beetroot, leek, radish, etc.)
  • For the tzatziki:
  • 2 Garlic cloves
  • 200g pre-cooked beetroot
  • Provamel Soya Unsweetened alternative to yogurt
  • 1 tbsp raspberry vinegar
  • 1 tbsp olive oil
  • 1/2 of bunched dill, finely chopped
  • Salt and pepper

  1. Start with the tzatziki. Peel the garlic and chop the beetroot into small cubes or grate.
  2. Mix all ingredients for the tzatziki together and season with some salt and pepper.
  3. Remove the leaves from the head of lettuce and cut the avocado into pieces. Chop the walnuts finely.
  4. Fill a taco with a lettuce leaf, avocado and beetroot tzatziki, top with the shoots and walnuts.
