Bircher Muesli with Prunes

  • 1 pear
  • 160g of Oats
  • 4 tbsp of Provamel Soya Unsweetened alternative to Yogurt
  • 3 tbsp of Chia seeds
  • 200ml of Provamel Almond Drink
  • 8 Prunes
  • 2 oranges, juiced and zested
  • 1 to 2 tbsp honey (optional)
  • A few sprigs of mint.

  1. Finely cut the pear and mix with the oats, 1 tbsp of Chia seeds, Provamel Soya Unsweetened alternative to yogurt and let refrigerated for 30 minutes (leave overnight for optimal results).
  2. Meanwhile, make the prune compote. Cut the prunes in four, remove the pit and add orange juice and honey to your desired taste. Bring everything to a boil and let simmer on medium heat.
  3. Serve the chilled Bircher muesli with the warm prunes compote and top with zest of orange, chia seeds and Mint.
