Gluten-free herb pancakes

Ingredients

  • 1 sprig of fresh herbs of your choice e.g. chives, parsley or coriander
  • 175 ml Provamel Rice Unsweetened Drink
  • 75 g rice flour
  • 75 g chickpea (gram) flour
  • 2 tsp baking powder
  • Pinch salt (optional)
  • Sunflower or rapeseed oil for frying

  1. Put the Provamel Rice Unsweetened and the herbs into a blender and blend until smooth.
  2. Combine the two flours and add to the herb drink mixture, blending well. Add some more Provamel Rice Unsweetened if necessary.
  3. Season with a pinch of salt (if desired) and add the baking powder.
  4. Heat a heavy based frying pan and add a little oil. For each pancake, pour a few spoonfuls of the batter into the pan and cook for a few minutes on both sides until golden brown.
