Muesli bars with fruit

Ingredients

  • 4 tsp chia seed
  • 220 ml Provamel Rice Unsweetened Drink
  • 200 g dried figs
  • 30 g vegetable oil spread
  • 100 g dried apricots, cut into thin strips
  • 50 g almonds, chopped
  • 50 g sunflower seeds
  • 150 g oats
  • 1 tsp cinnamon
  • Pinch salt

  1. Pre-heat the oven to 200°C / fan 180°C / gas 6.
  2. Soak the chia seed for approx. 15 minutes in 100 ml Provamel Rice Unsweetened Drink.
  3. Remove the stalks from the figs and add to a pan with the remaining Provamel Rice Unsweetened and the vegetable spread. Bring to the boil before removing from the heat and resting for 10 minutes.
  4. In a bowl, mix the strips of apricot with the almonds, sunflower seeds, oats, cinnamon and salt.
  5. Add the fig and chia seed mixture and mix well with a spoon.
  6. Place the mixture into a greased and lined square baking tray and press down to a 2cm height.
  7. Bake for approximately 30 minutes in the pre-heated oven. Remove from the oven and allow to cool.
  8. Once cooled, cut the mixture into even sized bars.

tip

The bars can be prepared the evening before and kept in an airtight container.
