SWEET AND SPICY POTATO WAFFLES

Ingredients

  • 140ml Provamel Oat Drink
  • 30ml olive oil
  • A large pinch of chili powder
  • 1⁄2 teaspoon salt
  • 100g flour
  • 1 teaspoon baking powder
  • 1 tablespoon soya flour
  • 130g sweet potato, peeled
  • Half an onion, peeled (50g)
  • Half a bunch of coriander

  1. Grate the sweet potato with a cheese grater and cut the onion into small pieces.
  2. Roughly chop the coriander and discard the stalks. In a mixing bowl, combine the Oat Drink, olive oil, chili and salt.
  3. Add in the flour, soya flour and baking powder. Finally, fold in the sweet potatoes, onions and coriander
  4. Pour the mixture into a waffle iron.

tip

The batter can be prepared in the evening and left to rest in the fridge overnight, so you can enjoy freshly cooked waffles in the morning.
