Vegan Christmas cake

  • 240 g flour
  • 2 tl baking powder
  • 225 g sugar
  • 4 cardamom pods
  • 1 pinch of salt
  • 2 hands of dried cranberries
  • 120 ml groundnut oil
  • 180 g Provamel Soya alternative to yogurt zero sugars
  • 2 tl orange zest
  • Juice of 1 orange

  1. Preheat the oven to 175°C.
  2. Mix all the wet ingredients.
  3. Remove the seeds from the cardamom pods and grind them in a mortar. Add this to the wet ingredients. Also add the remaining dry ingredients and mix to a smooth mass. Don’t stir too long.
  4. Grease the tree-shaped baking tin with oil and pour in the dough.
  5. Put in the oven for 35-45 minutes until the cake is baked. Use a skewer to check your cake. If the skewer comes out of the cake without any dough on it, your cake is ready!
  6. Remove from the oven and let it cool for 10 minutes. Take the cake out of the tin and cover with some powder sugar. Enjoy!
