Vegan Christmas tree cookies

  • 500 g spelt flower
  • 210 g cane sugar
  • 100 g moscovado
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cloves
  • ½ tbsp cinnamon
  • 1 tbsp ginger powder
  • 1 pinch of white pepper
  • Zest of 1 lemon
  • 150 ml groundnut oil
  • 120 ml molasses
  • 120 ml Provamel Hazelnut drink (can be replaced with Almond or Macadamia drink)

  1. Put the dry ingredients in a bowl and mix well. Use another bowl for mixing the wet ingredients and beat to a smooth mass. Add the dry ingredients, all the while stirring continuously until you get a dense batter. Now use your hands to further mix the dough (don’t knead). Roll the dough into a ball, cover with foil and let it sit in the fridge for at least 3 hours.
  2. Preheat the oven to 180°C.
  3. Roll out the dough to a thickness of about 3mm. Use a tree-shaped cookie cutter and place the cookies on a tray lined with parchment paper. Tip: if you want to use the cookies as a decoration for your DIY tree, don’t forget to poke a hole in the cookie.
  4. Bake for 10 to 14 minutes in the oven until the cookies are brown and the smell of Christmas is filling your house!
  5. Finish the cookies with icing. Ready for some plant-based sweets?
