Dice the cold butter, add the flour, oatmeal, coconut sugar, some cinnamon and the almond flakes. Mix the ingredients with your fingers until you have a crumbly dough. Divide the crumble over a greased tray with baking paper. Put in the oven for 10 mins until the crumble is golden brown. Let it cool and coarsely mix using a food processor.
Peel and cube the pears. Melt a tbsp of butter in a skillet and bake the pears golden brown. Pour the coffee over it and let it simmer. Add the cinnamon. Let it cool.
Take 4 glasses and add a layer of pears, ladle some Soya-Almond yogurt over it, alternate with another pear layer and finish with a dollop of yogurt and the crumble.
