Roasted Rhubarb and Vanilla Desserts

  • 400 g rhubarb, roughly chopped
  • 40 g golden caster sugar
  • 1/2 lemon, juice of
  • 500 g Provamel Dessert Vanilla
  • a pinch ground cinnamon

  1. Preheat the oven to 220°C / Fan 200°C / gas mark 7. Line a baking sheet with a non-stick Teflon sheet or grease well. Spread the rhubarb out.
  2. Sprinkle the golden caster sugar over the rhubarb and squeeze over the lemon juice. Roast for 10 mins until the rhubarb is just tender. Cool without moving.
  3. Spoon the vanilla desserts into four glass compote dishes. Spoon the rhubarb over the top. Sprinkle each one with a pinch of cinnamon and serve.
