Ingredients

  • 800g leftover vegetables, cooked, in pieces
  • 50g spinach leaves
  • 100g vegan alternative to cheese, crumbled
  • 200g cooked red quinoa or pasta or rice
  • 2 tbsp chopped fresh herbs of your choice
  • 400ml Provamel Soy Unsweetened Drink
  • 1 tbsp dried herbs of your choice
  • Salt and pepper
  • 7 sheets of filo pastry
  • 2 melted plant-based margarine
  • 1 tbsp black sesame seeds

  1. Heat the oven to 180°C.
  2. Take an oven dish, add the vegetables, spinach, crumbled cheese, cooked quinoa and fresh herbs.
  3. Pour in the Provamel Soy Unsweetened Drink and add the dried herbs and stir well. Season to taste with salt and pepper.
  4. Crumble the filo pastry sheet by sheet and place on top of the vegetables, brush with the melted plant-based margarine and sprinkle with the sesame seeds.
  5. Place in the oven for 25 to 30 minutes until crisp.
