Red Lentil and Sweet Potato Curry

  • Olive oil
  • 1 onion
  • 2 garlic cloves
  • 2 generous tbsp garam masala powder
  • 500 gr sweet potato
  • 1 can (400 gr) chopped tomatoes
  • 200 ml water
  • 130 gr lentils
  • 400 ml Provamel Organic Oat Drink
  • 3 handfuls spinach
  • 150 ml Provamel Organic Soya-Coconut alternative to yogurt
  • Fresh coriander
  • Salt & pepper

  1. Heat the olive oil in a deep pan and sauté the finely chopped onion and garlic till the onion starts to brown
  2. Peel and dice the sweet potato. Add it to the onions along with the garam masala, tomatoes and water and simmer with a lid on for 10 minutes.
  3. Add the lentils and Provamel Oat Drink and bring back to the boil, lower the heat and leave to simmer gently for another 10 minutes.
  4. When the sweet potato is soft and the lentils cooked through, add the spinach and add salt and pepper to taste.
  5. Serve topped with a spoonful of Provamel Organic Soya-Coconut alternative to yogurt, and sprinkle of chopped coriander. A simple store cupboard supper you can serve up faster than your local takeaway could ever deliver!
