Zuccinin Soup

Soya Unsweetened


  • 3 zucchini’s
  • 1 yellow onion
  • 2 gloves of garlic
  • 500 ml vegetable stock
  • 200 ml Provamel Organic Soja Drink no sugars
  • 80 g spinach
  • couple of leaves of lemon balm
  • salt and pepper
  • 200 g vegan feta cheese
  • 1 tsp sumac spice

  1. Heat a deep pan with olive oil. Fry the onion and garlic till the onion starts to brown.
  2. Add the zucchini, vegetable stock and Provamel Soya Drink No Sugars, bring to the boil and simmer until the vegetables are just soft.
  3. Add the spinach and the lemon balm, heat for a minute or so until just wilted, then blend the soup until smooth. Season with salt and pepper to taste.
  4. Serve topped with crumbled vegan alternative to feta cheese and a sprinkle of the sumac spice. A humble bowl of soup but it sure packs in the flavour!
