Banana peel chutney

  • 6 organic ripe banana peels + 1 banana flesh
  • 1 large onion, peeled and diced
  • 2 small chili peppers, roughly chopped
  • 1 tbsp mustard seeds
  • 2 tbsp turmeric powder
  • 2 cloves
  • 300 ml orange juice
  • 200 ml Provamel Soy No Sugars Drink

  1. Soak the banana skins in cold water for two hours.
  2. Drain the banana skins and cut into very small pieces.
  3. Heat a large saucepan with a tablespoon of oil over a medium heat. Add the onion, chillies and a teaspoon of salt, and saute for five minutes. Stir in the mustard seeds, turmeric powder, cloves, the chopped banana skin and one chopped banana. After two minutes, add the orange juice and Provamel drink and leave to simmer (on a lower heat) for 10 minutes, until you have a jam-like texture.
  4. Serve with vegan cheese, add to crackers or spread on a toast topped with Provamel Soy yoghurt.
