Finely chop the almonds ( or you can give them a quick pulse in a blender, but keep them bitty and crunchy).
Finely dice the dates and stir together with the almonds, two tablespoons of the grated coconut and lemon zest.
Pour in the Provamel Rice-coconut Drink. Mix well until good and sticky.
Make eight little balls and roll them in the rest of the grated coconut to give them a nice, even coating. Pop in the fridge to firm up, or for as long as you can resist popping them in your mouth!
